  • Ajowan (also known as Carom, Ajwain, Bishop's Weed and Seeds Of Bishop's Weed) looks like wild parsley  and is a native of India. It is grown throughout the country in Madhya Pradesh, Andhra Pradesh, Gujarat, Maharashtra, Uttar Pradesh, Rajasthan, Bihar and West Bengal. It is also grown in Pakistan, Afghanistan, Iran and Egypt. The striped seeds are used as the spice. 
  • Ajowan is an erect, glabrous or minutely pubescent, branched annual that grows up to 90 cm.The fruits are ovoid, greyish brown, aromatic cremocarps with single seed. 
  • The essential oil distilled from the seed is used to flavour gin as well as the liqueur Kummel. It is also used in mouthwashes.
  • Ajowan is usually ground in a mortar and pestle, or crushed by rubbing between hands or fingertips before using. When used whole, for parathas or other breads, lightly bruise the seeds first, to release oils and increase flavour. The seeds can be stored indefinitely if kept from light in airtight containers.
  • Usage of ajowan is almost confined to Central Asia and Northern India. Ajowan is particularly popular in savoury Indian recipes like savoury pastries, snacks and breads. 
  • Ajowan is much used as a medicinal plant is ayurvedic medicine for its antispasmodic, stimulant, tonic and carminative properties. The seeds are used to ease asthma and indigestion. It is also widely used to treat diarrhea and flatulence.
  • Demand is in the home market as well as export market. The source of demand is from end use industries which are primarily personal care products, food products, pharmaceuticals. The demand for essential oil of the fragrance industry is 60%, flavour industry 20% and pharmaceutical industry 20%.
