Eggs are one of nature's most nutritious foods. One large egg contains
only 70 calories and an incredible amount of nutrition.
An egg consists of a yolk at the center, surrounded by albumen (white),
both of which are enclosed within the shell.
The yolk consists of fats, vitamins and minerals, together with about
half of the egg’s total protein content.
Egg albumen is rich in protein and vitamins and it contains substances
which protect the egg from micro-organisms which may have entered through
the shell.
The egg shell consists of the inner and outer shell membranes, the true
shell and the cuticle.
Eggnogs is a rich, creamy beverage, traditionally popular during the
holiday season which begins with Thanksgiving and ends on New Year’s Day.
Coddled eggs are made by very briefly immersing an egg in the shell in
boiling water (to cook in water just below the boilingpoint)
to slightly cook or coddle them.
The manufacturing process of the egg flakes includes breaking up of the
eggs in a shelling dessicator and separating white portion manually.
The egg products industry processed 17 billion eggs or 27% of the U.S.
production of eggs in 1996.
The total egg production in India was estimated at INR 40 billion in FY
2003-04, with contribution from Gujarat at INR 444 million.
The end user industries found to have great demand for egg albumin
flakes ranging from 30% to 40% growth per annum.
If the retail customer pays $1.30 per dozen for eggs and the marketing
cost is $0.50, then $0.80 is left for the farmer.
